Savor the Flavor

Garlic Toast with Green and Cannellini Beans
3 cups water
12 cups Kale, torn (1bunch)
1 teaspoon olive oil
1 ½ onion, finely chopped
½ teaspoon dried oregano
1 cup plum tomato, diced and seeded
1/8 teaspoon salt
1/8 teaspoon crushed red pepper
2 minced garlic cloves
1 (16 ounce) can cannellini beans, or other white beans, rinsed and drained
1 halved garlic clove
4 (1 ½ ounce) slices peasant or country bread, toasted


Boil the water in a large pot, then add the kale. Cook until tender approximately 6 minutes. Drain in the colander over a bowl, reserving 1 cup cooking liquid. Heat oil in a large nonstick skillet over medium high heat. Add the oregano and onion and sauté for about 5 minutes. Then add the salt, tomato, minced garlic, crushed red pepper and sauté for 1 minute. Stir in the kale, reserved liquid and beans, cook for 3 minutes. Rub the garlic halves on one side of each toast slice. Place toast slices, garlic sides up on 4 plates and sprinkle each slice with 2 tablespoons cheese. Top each with 1cup bean mixture and 1 tablespoon cheese. Makes about 4 servings
